Petroni Vineyards 2007 Estate Cabernet Sauvignon, Sonoma Valley, CA
From the epic 2007 vintage, rated 92 points by Wine Enthusiast, comes this powerful and balanced offering from Petroni Vineyards. Deep garnet in color, it is immediately obvious that this is a serious Cabernet Sauvignon. Winemaker Martin Mackenzie employed classic Bordelaise techniques such as warm fermentation with an extended maceration period of four or more weeks, extracting as much color and tannin as possible. Aged 18 months, half in new French oak and half in neutral French oak, the winemaker used techniques to help the tannins evolve and remove sediment so the wine is unfiltered. Autumnal aromas and flavors of black cherries, stewed black fruits, sweet herbs, cola, vanilla and dirty leather explode out the glass. On the palate this wine has amazing balance and is full bodied with a lingering finish.
