Cornerstone Cellars 2007 Cabernet Sauvignon, Napa Valley, CA
Made from grapes sourced from three Napa Valley AVAs: Howell Mountain, Oakville and southern Napa County, the conditions for this vintage were near perfect. The fruit underwent a three day cold soak before maceration which lasted 15 days. The wine was then aged in 75% new French oak for 21 months. The resulting wine has a deep opaque ruby tone and a nose of baked blackberries, ripe black cherries and damp earth. Layered underneath those initial aromas are nuances of clove, eucalyptus and black tea. On the palate this Cabernet is full in body and high in tannin with a good level of acidity to balance it out. Flavors of black fruit, earth, clove, vanilla and a hint of milk chocolate round out this phenomenal tasting experience. Decant for one hour for the best tasting experience.

About the Winemaker:
Named 2008 Winemaker of the Year by Food & Wine Magazine, Celia creates high-end wines for the upper tier wineries in Napa Valley. Highly sought after, she graduated from the University of California- Davis with a degree in Enology. After traveling and working in vineyards in the United States, New Zealand and Australia, Celia returned to Napa Valley to begin making fine wines. As the winemaker for some of Napa Valley’s most elite wineries including Scarecrow, Dr. Stephens, Keever andHusic, Celia received an almost unbelievable 100 points from Robert Parker’s Wine Advocate for her 2007 Scarecrow Cabernet. It seems creating highly rated wines is Celia’s speciality and this Cornerstone Cabernet is no exception, receiving multiple awards and accolades.
