Take the beautiful, winding drive up Spring Mountain and it is here you’ll discover Schweiger Vineyards. Their single varietal, 100% estate Cabernet Sauvignon has an eye-catching appearance, with a glistening deep garnet – nearly black – core. Restrained aromas from the high elevation mountain fruit show dark cherry, tart wild blackberry and plum fruit, laced with notes of toasted cedar, vanilla, bitter chocolate and black pepper. The structured palate gives a nod to the ageability of the wine, with gripping tannins and mouthwatering acidity leading to a velvety, long finish. We suggest aerating the wine for about 45-60 minutes for maximum enjoyment!

About the Winemaker:
Born in Sonoma County and surrounded by vineyards on the family property on Spring Mountain, Andrew gained a passion for winemaking early in life. A graduate at the University of California, Davis, with a bachelor's degree in enology and microbiology and a minor in viticulture and music history, Andrew began working at Chateau St. Jean, followed by time with Cain Cellars, Joseph Phelps and Trefethen Vineyards. When Schweiger Vineyards began wine production in 1994, he managed the winemaking operations in addition to his full time obligations. Andrew took the leap to Schweiger Vineyards full time in 1999 when the winery chose to stop selling fruit to other wineries. He now crafts a range of Estate wines, including Chardonnay, Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec, Sauvignon Blanc, Port, two micro block Cabernet Sauvignons, and his signature Bordeaux-style blend, Dedication®.
About the Vineyard:
Meticulously managed by Fred Schweiger and his team, the estate vineyard sits at the apex of the Spring Mountain District at an elevation of 2,000ft. The small blocks of Cabernet vines are 22-30 years-old, planted in deep volcanic soils, from which every vintage of the Schweiger Cabernet is made.

Aged 33 months in 60 gal oak barrels: 45% new French Oak, 55% 2–3 year old French Oak
Beef, lamb, sausage, grilled meats, roast pork, BBQ and game meats will all work quite well with this wine, as will mushrooms and savory herb dishes. Also try this Cabernet Sauvignon-based red blend with hard cheeses like Cheddar, Colby and Parmesan.
