Meet Hersly Wines
Relative “new kids” on the Napa and Sonoma wine block, Adam and Stacy Hersly left their lives in New York City to pursue a lifelong dream of living and making wine in the heart of California wine country. The Hersly Wines philosophy of winemaking is simple – make what you enjoy and share it with friends and family accompanying good food and lots of joy. And of course, consult with Mae, the offical winery dog as needed! Winemaker Adam Hersly launched his passion for “liquid art” with winemaking classes at the renowned UC Davis and a few valuable internships, including one at the iconic Joseph Phelps Vineyards. Adam now produces extremely limited, handcrafted wines from Napa and Sonoma counties frequently found at the likes of The French Laundry, Eleven Madison Park, NoMad and Del Frisco's to name a few, including the two beautiful wines featured in the Payroll Vault offering.

100% Sauvignon Blanc
Tasting Notes: Found on the esteemed wine lists of such places as The French Laundry, Morimoto (NY and Napa) and Masa, the boutique production 2016 Sauvignon Blanc offers a refreshing acidity that makes this a fantastic food pairing wine – think arugula, granny smith apple and goat cheese salad or grilled shrimp linguine! Only 119 cases produced.
Hersly Wines 2014 Cabernet Sauvignon
Coombsville, Napa Valley, CA
100% Cabernet Sauvignon
Tasting Notes: The 2014 vintage was a highly rated, superb vintage, known for a big crop of charming, dense, cellar-worthy wines. When you also factor in the premium Coombsville fruit and a highly passionate and talented winemaker, you get something very special in the bottle. A deep opaque in color, with an intense, dark garnet core. This wine shows off a depth of aromas, with dried savory herbs, blackberry and dark cherry playing a prominent role early on. As the wine opens, bakeshop spices and vanilla complement nicely, and hints of black licorice and subtle eucalyptus show through. Dark fruit and spice notes follow through on the palate. The tannins are present, yet soft, and the vibrant acidity provides wonderful balance on the wine’s medium-full finish. Decant for 30-45 minutes and enjoy every decadent sip.
