Tasting Notes:

This is a wine with which to embrace the terroir, or sense of place, as the French like to say. It is estate grown, produced and bottled one mile off of the Silverado Trail, east of Yountville on the south end of the Stag’s Leap Range. The vines enjoy east and west facing hilltops with white volcanic ash soils in a microclimate a few degrees cooler than the valley floor.

The color is deep and bold ruby in color, indicating the bold flavor profile of this vintage. The nose presents black plum, olive, graphite and oak; while the mouth gives way to bright berry notes of raspberry, strawberry and blackberry. A finish of black cherry and licorice with a balanced tannic structure make this a classic Napa Valley Cabernet.

Food Pairing Suggestions:
Cabernet Sauvignon is great on its own, but the flavors can be significantly enhanced and more enjoyable with a hearty meal. Lamb, pork, sausage, grilled meats, stews, and game will all pair beautifully with this wine. Dishes with black olives, black pepper, pungent herbs, and mushrooms will also compliment nicely. Look for recipes where power is combined with elegance to mirror this wine’s style.
About the Winery
White Rock Vineyards Situated in a small valley in the southern foothills of the Stag’s Leap Range, White Rock Vineyards’ family-run estate began making wine in the 1870’s. The winery is located underground in the caves that were bored in 1988, one of the first winery caves dug since the 1800’s. Volcanic ash soils, mature hillside vines, a cooler climate, varied exposures, and the caves make these wines complex and concentrated with a mineral character that expresses the earth itself.
