1) Relish in a rare opportunity to have lunch with the winemaker. For all purchases of 2 cases or more, Sam Baxter will host you and up to 4 guests for lunch at the spectacular site of Spring Summit Ranch. Terra Valentine is not open to the public for tastings and you are having lunch at the Baxter's private property Spring Summit Ranch atop Spring Mountain - an unprecedented opportunity! Note: Scheduling is based on winemakers availability.
2) Enjoy a bottle personally signed by Sam Baxter for your collection or to give as a gift when you purchase this wine by the case (12 bottles).
Tasting Notes:

Spring Mountain wines are quite unique to their location with a lean yet powerful muscularity. At elevations above the fogline, the hangtime is longer which allows for structured and complex fruit. Add to that the volcanic soils and you have a wine displaying profound flavors.

Visually the wine appears dark cherry red in color with beautiful ruby hued edges. Aromas surge from the glass with currants, cranberry, dried herbs, leather and a hint of black licorice. A sip reveals an explosion of black fruit flavors at the onset; black cherry, blackberry, and boysenberry evolve into tertiary flavors of ripe plum, leather and tobacco on the mid-palate. The finish is medium in length with notes of coffee, black tea and earth. This wine is immediately enjoyable now and can age for five to six more years.

About the Winemaker:
Wurtele Vineyard and Yverdon Vineyard
About the Vineyard:
Sourced from two estate vineyards, Wurtele Vineyard and the Yverdon Vineyard, this wine captures all that is unique about the Spring Mountain AVA. Each vineyard is distinguished in its own way, providing a unique set of soils, exposures, and microclimates and allowing for wines of distinction and personality. At the same time, both vineyard sites provide a sense of mountain terrain and vines well adapted to the environment. While mountain sites in general present challenges including accessibility, diversity of soils, ripening and hand labor, they produce wines filled with intense flavor and color.
Additional Winemaker Notes:

Food Pairing Suggestions:
The pairing of bold red wine with food can be daunting. Think of matching heft and weight when selecting dishes to serve with your Cabernet-dominant wine. Pair with beef, especially grilled, roasted, stewed or braised dishes. A wine with higher tannins works best when it has fattier meat to cut through. Game meats all pair wonderfully with this wine as do dishes with eggplant, mushrooms or pungent herbs. Also pair hard aromatic cheeses like Roquefort, Blue and Camembert varieties.
About the Winery
