With just 456 vines from a small vineyard near Sonoma Square, this single vineyard Cabernet Sauvignon is the quintessential definition of small production.

A glass of this lovely juice is concentrated, and exquisitely reddish-purple in color. The nose is fragrant with black fruit, rustic earthy notes, dried herbs and vanilla. The palate is complex and boasts flavors of blackberry, chocolate covered cherries, leather and cinnamon. Well integrated tannins guide a lengthy, fruity, satisfying finish.

This under-the-radar Cabernet Sauvignon comes from a single vineyard with only 456 vines. A wine that small in production deserves a special meal. Hearty dishes like lamb, beef, pork, sausage, grilled meats, stews and game will all pair beautifully with this wine. Dishes with black olives, black pepper, pungent herbs, and mushrooms will also complement nicely. Hard cheeses and salami make a perfect accompaniment as well. For dessert, serve with dark chocolate to highlight the flavors of the wine.

While they all went out in the world to do their own thing, they now find themselves together again. The mission - make superb, artisan, small-production wines from the vineyards they have known since childhood. The name Subterra Wines, along with the label theme, grew from a desire to make "underground" wines that one can only get by knowing someone.
