Tasting Notes:

With just 456 vines from a prime, single vineyard location just 5 blocks from Sonoma Square, one can truly call this an "underground" wine. Subterra Wines is the winery you hear about from a friend. Their goal is to be word-of-mouth only. Don't let the bones on the label fool you though, this wine is very much alive.

If you're fortunate enough to taste this ultra-small production Cabernet Sauvignon, you'll first notice the color, a rich dark red, almost purple. The nose has generous aromas of bright, fresh fruit, anise and cigar box. Following through to the palate is flavors of blackberry, plum, cassis, black olive and cedar with a hint of minerality. The tannins are balanced on the finish.

Food Pairing Suggestions:
A wine made by friends should be shared with friends over a great meal. Pair with a hearty meal. Lamb, beef, pork, sausage, grilled meats, stews, and game will all pair beautifully with this wine. Dishes with black olives, black pepper, pungent herbs, and mushrooms will also complement nicely. Hard cheeses and salami make a perfect accompaniment as well. For dessert, serve with dark chocolate to highlight the flavors of the wine.

While they all went out in the world to do their own thing, they now find themselves together again. The mission - make superb, artisan, small-production wines from the vineyards they have known since childhood. The name Subterra Wines, along with the label theme, grew from a desire to make "underground" wines that one can only get by knowing someone.
