Tasting Notes:
This remarkable Estate grown and bottled Cabernet Sauvignon was made from grapes grown in deep volcanic soil from 16-24 year old vines. Aged for 32 months in a blend of new French oak, 2-3 year old French oak and a small percentage of 2-4 year old American oak, this wine has the potential to age gracefully for 10+ years. A big, bold powerful wine exhibiting aromas and flavors of blackberries, black currant, plum, dark chocolate, espresso and toasty oak meet undertones of hearty herbs and damp earth. On the palate this wine shows big tannins that will soften with decanting or aging into a velvety mouthfeel with a long, supple finish. This is an excellent gift for the wine connoisseur in your life!

About the Winemaker:
Winemaker Andrew Schweiger grew up surrounded by vineyards in his family’s Spring Mountain home near St. Helena, CA. In high school he spent summers working at local wineries and gained a passion for the art and science of winemaking. Andrew received a Bachelor’s degree in Fermentation Science with a minor in Viticulture from the University of California-Davis. While in college, he put his newfound knowledge to use while working at a variety of wineries including Joseph Phelps and Trefethen Vineyards. After graduation he continued expanding his knowledge by working at Chateau St. Jean and Cain Cellars. In 1994 when Schweiger Vineyards started producing wine, Andrew began overseeing all wine making operations. In 1999 he refined his focus solely on Schweiger Vineyards.

Food Pairing Suggestions:
This wine was specifically made in a style to pair well with food. Serve with beef, pasta & meat sauce, lamb, hamburgers, hard aged cheeses, mushroom dishes and dark chocolate. For the best results pair this wine with steaks or chops while young and then more complex dishes as it ages.
