From the epic 2007 vintage, rated 92 points by Wine Enthusiast, comes this powerful and balanced offering from Petroni Vineyards. Deep garnet in color, it is immediately obvious that this is a serious Cabernet Sauvignon. Winemaker Martin Mackenzie employed classic Bordelaise techniques such as warm fermentation with an extended maceration period of four or more weeks, extracting as much color and tannin as possible. Aged 18 months, half in new French oak and half in neutral French oak, the winemaker used techniques to help the tannins evolve and remove sediment so the wine is unfiltered. Autumnal aromas and flavors of black cherries, stewed black fruits, sweet herbs, cola, vanilla and dirty leather explode out the glass. On the palate this wine has amazing balance and is full bodied with a lingering finish.

About the Winemaker:
A native of New Zealand, Martin studied Viticulture and Oenology at the Eastern Institute of Technology in Hawkes Bay, New Zealand. Immediately after graduating he landed a one year internship at Stonyridge Vineyard after which he was offered the position of Assistant Winemaker. In 2002 he took over the role of Winemaker and eventually became the General Manager. After a ten year commitment to Stonyridge Vineyard, Martin moved to California where he became the Winemaker for Petroni Vineyards.
About the Vineyard:
The grapes for this wine were sourced from two Petroni Estate Vineyards. Trinity Ranch, located high in the Mayacamas Mountains and Poggio alla Pietra on the Sonoma side of Mount Veeder consistently produce concentrated, ripe fruit in small yields of only two tons per acre.

General Food Pairing Suggestions:
This bold, elegant wine needs a dish that can stand up to its full body. Steak, grilled pork, hamburgers and pasta with meaty red sauce are all good pairings. Cow’s milk cheeses pair especially well with Cabernet, especially Gouda and mild Blue cheeses.
About the Winery
Petroni VineyardsFor years, Lorenzo Petroni dreamed of bringing his love for wine to California. In 1992, he and his wife Maria Elena purchased a 37 acre estate just south of the famed Monte Rosso Vineyard in Sonoma Valley, the perfect location to produce his world class wines. At a steep 800 foot elevation, the mineral rich and rocky soil with south facing exposure proved the ideal spot in which to grow wine grapes.Learn more
