As we get closer to the holidays and the gourmet feasts that frequently accompany them, our team looks for wines that will not only impress the guest or the host, but will also serve as a fine food-pairing companion. The Noble 2009 Cabernet Sauvignon is just that.
Noble Wines releases their vintages a bit later than most – driven by the barrel and bottle time it takes to get the wine into perfect drinking condition. It is nearly opaque, with a deep cranberry red in color and brick orange edges. The aromatics on this wine deepen after a few hours in the glass, first showing off a core of dark fruits – blackberry, plum and cherry – complimented by well-integrated oak, a hint of vanilla and cocoa powder. With more time in the glass, you may discover tart blackberry liquor and subtle notes of dried violet, black pepper and fresh brewed coffee. On the palate, dusty tannins are present but somewhat delicate, with acidity shining through in a refreshing balance that is both delightful and perfectly food-friendly. Enjoy!
