Tasting Notes:
This wine is a Cellar Angels' Exclusive!
Winemaker and owner Jason Moore’s 2008 Cabernet Sauvignon is a new release and an ultra-small production with only 7 barrels of this luscious wine bottled. This wine has powerful and deep aromatics, loads of black fruit, hints of cedar, sweet vanilla, cassis, and super fine grain tannins which lead to a lengthy, broad and powerful palate. Grown mostly from the Coombsville region in southern Napa Valley, this Cabernet-based blend consists of a selection of the finest Cabernet Sauvignon vineyards. The fruit was triple sorted down to the berry, fermented in both small open top fermenters and new French oak barrels, and matured in 75% new French oak for 22 months.

Beef, pasta with meat sauce, lamb and hamburgers pair beautifully with this wine as do hard aged cheeses, mushroom dishes and dark chocolate.
About the Winery
Modus Operandi
This is the story of a Dallas waiter turned Napa Valley Winemaker.
Jason Moore's passion for wine began as he waited tables in various fine dining establishments in Dallas, Texas. Pursuing that passion took a monumental leap when he and his wife sold everything and moved to California in 2002. Jason learned how to make wine the hard way, hands on, literally practicing his winemaking skills from a garage with free grapes given to him.
