Tasting Notes:

This nearly opaque wine is such a beautiful, rich garnet in color. Give it a few good swirls and admire its slowly dripping, viscous legs in your glass – perhaps a Bottega del Vino crystal stem you earned during our holiday promo?

I would suggest allowing the wine to breathe for 45-60 minutes in order to fully enjoy its aromatic depth. Early aromas of fresh blackberry and black cherry fruit are present, but not overbearing. Cinnamon stick, vanilla, and mocha aromas follow with subtle notes of dried herbs, red licorice and a touch of sweet oak. While young, its gripping, medium tannins already show good balance with the prominent acidity and fruit components. Its dark fruit and cocoa flavors lead to a refreshing, medium/long finish that easily encourages the next sip.

This delightfully balanced, elegant Cabernet Sauvignon needs a dish that can stand up to its fuller body. Steak, grilled pork, hamburgers and pasta with meaty red sauce are all good pairings. Cow’s milk cheeses pair especially well with Cabernet, especially Gouda and mild Bleu cheeses.
About the Winery
Maroon Wines Paul Maroon fell in love with wine country years ago, when he called on Napa Valley clients during his career in medical device sales. After forty years in sales and a growing respect for wine, Paul took a leap of faith and moved to Napa in 2000 to begin making wine. Learn more
