Tasting Notes:

One of the many great things about Mario Bazán Cellars’ Cabernet Sauvignon is that each year it is completely different from previous vintages. Remaining true to Mother Nature, they allow her to decide what gifts each year will produce inside the bottle. Having the pleasure of tasting many past vintages, this is one of the best in my opinion. 

A hearty deep ruby red in the glass, the aromas are abundant and enticing: warm toasty oak, crushed ripe blackberry and plum, fresh ground coffee, tilled earth and hints of eucalyptus. The flavor palate is equally as plentiful with blackberry and blueberry fruits up front evolving into chocolate covered cherry, black olive, rose petals and a slight dustiness that weaves in nicely with the tannins, ending in a finish of medium plus length. Only a 2015, our team is intrigued by what the future holds for this wine as it ages.

Pair this Cabernet Sauvignon with a nicely marbled NY strip, a cheddar burger with caramelized onions or roasted pork shoulder. We also love it paired with a shiitake mushroom polenta or a grilled portabello with a side of rich mac and cheese.
