Tasting Notes:
First, and most importantly, is to mention that this wine, like so many others grown in the intriguing and vastly diverse microclimates of Napa and Sonoma, dispels the blanket review by some critics that the 2011 vintage was off. This Spring Mountain gem is a light ruby red in color, but don't let it fool you. It packs a worthy Cabernet punch. With aromas of black cherry, plum, anise, dried herbs and hints of honey that translate the same to the palate, it continues with black currant, leather and black tea. The finish is extra long with notes of cherry giving way to medium, but well balanced, tannins.

Food Pairing Suggestions:
With red blends, food pairings become easy and diverse. Beef, lamb, sausage, grilled meats, roast pork, BBQ and game meats will all work quite well with this wine as will mushrooms and savory herb dishes. Also try this Cabernet Sauvignon-based red blend with hard cheeses like Cheddar, Colby and Parmesan. Have you found your favorite food and wine pairing? Share with us @CellarAngels on Instagram!
