Tasting Notes:

Cellar Angels is receiving exclusive access to this wine before official release to the public.

Their biggest, boldest cab yet. The 2012 is what Napa Cabernet lover’s dream of. If it's good enough for Entourage, Glee and Weeds, it's good enough for Cellar Angels!

This Cabernet is one of the boldest wines ever released from the JAX Cabernet Sauvignon lineup. This black wine focuses its efforts on muscle, flesh, power and resilience. The nose is forward with a beautiful mélange of black cherry, dark chocolate, espresso, dried herbs, oak toast and slight hints of seashore. The palate is anchored with roasted meat, savory plum, soy, dried currants and spice.  With power, yet restrain, this wine can be enjoyed now or cellared beyond 2030.

Track the evolution of this wine. Buy some to drink now and some to let age and taste over the coming years.

Food Pairing Suggestions:
A bold wine, the 2012 Jax Vineyards Cabernet Sauvignon needs a food pairing that can stand up to its full body. When pairing wine, consider the body of the wine and match that with the food. In this case, steak, grilled pork, hamburgers and pasta with meaty red sauce are all good pairings. Cow’s milk cheeses pair well with Cabernet, especially Gouda, aged Cheddar, Parmesan and mild Blue cheeses.
About the Winery
Jax Vineyards This family owned and operated vineyard was purchased by David Jackson in 1996. The family sold grapes to other producers for many years until they started producing their own outstanding Cabernet Sauvignon from their prime Calistoga land. Calistoga would later become its own AVA (American Viticultural Area), now famous for its unique terroir-driven Cabernet Sauvignon. With the help of Kirk Venge, a renowned Napa Valley winemaker and one of the "top 26 winemakers in the world", Jax Vineyards now produces many different wine varieties and blends to satisfy all palates.
