Angels, this wine is Thanksgiving perfection. And it starts with the fruit – a very small batch that comes from one of the most prized blocks on the Iron Horse estate! Then there is the native yeast fermentation. But what exactly does that mean and why is it so special? Native yeasts exist on and around grapevines or in the wine cellar and will inevitably induce a natural fermentation if left untouched. Winemakers will sometimes choose native yeast fermentation (aka indigenous, wild, natural) over cultured yeast fermentation because it can bring a deeper level of complexity to the wine. The Iron Horse team notes it gives this wine a unique mouth feel and heightens the expression of the selected Hyde Ole Wente clone.
The 2015 Chardonnay shimmers brightly in the glass, showing off a brilliant, pale straw yellow color. Layered aromas of spiced golden apple, tart key lime and crushed stone minerality are followed by a hint of caramel cream. Medium in body and dry on the palate, this wine has a zesty, mouthwatering acidity that lingers on the finish and will leave your palate wanting more.
