Tasting Notes:

Cellar Angels is proud to feature such a very special sparkling wine - our first bubbly in four years!  Sparkling wine (otherwise known as Champagne if made in that famous region in France) is versatile, food friendly, and comes in many flavors and colors. Sparkling wine can be made extra dry and as sweet as a dessert wine. It can also be light in color or left on the skins to extract a bit of red to produce a rosé. Extremely versatile with food, sparkling wine can be served as an aperitif, grace a Thanksgiving table or enhance the flavors of dessert. We all know it best as the wine to pop for a celebration. We think it should be opened for far more occasions, like a day that ends with a "y".

This beauty is a “vintage”, meaning all the grapes came from the same year. In this case, all grapes were harvested in 2007. Many times sparkling wine is labeled “NV” or non-vintage, when grapes from multiple vintages went into its production.

The Iron Horse 2007 Brut Rosé is so gorgeous in color and flavor; one may feel it should be saved for special occasions. The price, however, screams, “drink me all the time”. In the glass it appears a vibrant candy-apple red color. But don’t let it fool you, it’s a dry wine. The palate comes alive with rich, refreshing flavors of strawberry, raspberry, and cherry. Mostly crisp, there is a slight hint of creaminess. It finishes cleanly but your memory of such a lovely wine calls for more.

Sparkling wines are possibly the most adaptable and versatile wines to pair with food. Serve before a meal to refresh the palate and prepare it for food. Sparkling wine is commonly served with appetizers as it pairs with everything from fine cheese to egg rolls. Ideally this sparkling wine would pair beautifully with fish and shellfish, but Iron Horse Vineyards suggests giving it a try with steak as it's hearty enough to hold up. Finally, serve with a dessert of fresh fruit for a light and lively finish to your meal.
