Tasting Notes:Made from grapes sourced from three Napa Valley AVAs: Howell Mountain, Oakville and southern Napa County, the conditions for this vintage were near perfect. The fruit underwent a three day cold soak before maceration which lasted 15 days. The wine was then aged in 75% new French oak for 21 months. The resulting wine has a deep opaque ruby tone and a nose of baked blackberries, ripe black cherries and damp earth. Layered underneath those initial aromas are nuances of clove, eucalyptus and black tea. On the palate this Cabernet is full in body and high in tannin with a good level of acidity to balance it out. Flavors of black fruit, earth, clove, vanilla and a hint of milk chocolate round out this phenomenal tasting experience. Decant for one hour for the best tasting experience.

Food Pairing Suggestions:This wine was specifically made in a style to pair well with food. Serve with beef, pasta & meat sauce, lamb, hamburgers, hard aged cheeses, mushroom dishes and dark chocolate. For the best results pair this wine with steaks or chops while young and then more complex dishes as it ages.
