Tasting Notes:
From the team behind Clif Bar and LUNA comes this “killer” Cabernet Sauvignon. Very well balanced and with great structure, this wine exemplifies all that a great Napa Valley Cabernet should be. Black fruits, baked red fruit and leather aromas tantalize the nose while flavors of plum, baked cherries, licorice, vanilla and savory hints of autumnal pungency inundate the palate. It is apparent from the first sip that the winemakers are passionate and diligent in their pursuit of creating a grand wine that will excite and charm even the most demanding of drinkers.

Sarah Gott and Bruce Regalia

About the Winemaker:

Sarah Gott is a perfect fit in the Clif family as a passionate winemaker and also as a triathlete. She received a degree in Viticulture and Enology from University of California-Davis and began her career at Joseph Phelps Vineyards in the early 1990’s. She has also worked as the winemaker at Quintessa and currently works at Joel Gott Wines with her husband, while also consulting for several Napa Valley wineries. Her partnership with Bruce Regalia for this 2008 Kit’s Killer Cab was a fortunate meeting of creative minds that developed this elegant and charming wine.

Bruce has been studying the process of fermentation, whether it be wine, beer or vinegar, since childhood. In college Bruce focused on plant and soil science with a specific concentration on viticulture. His career in Napa Valley has seen him at several fine wineries such as Navarro Vineyards, Obester Winery and Duckhorn Goldeneye.

Food Pairing Suggestions:
This bold wine needs a dish that can stand up to it instead of being overwhelmed by it. Steak, grilled blackened chicken or pork and heavy pasta dishes with meaty red sauce all work well. Additionally, aged Cheddar or Brie will complement this wine nicely as will bitter dark chocolate.
